Thanksgiving desserts

 Need a handcrafted special treat for Thanksgiving? Order Greene Treats to share with your friends and family for this special holiday of giving thanks. Maple pecan pie, Pumpkin pie, Apple Crumble pie, Caramel Pear Cranberry pie (all large pies are $24 + s/h), and espresso fudge brownies ($14 + s/h) are all available made-to-order and delivered to your door. licensed october 12th

It was Labor Day, September 1st 2011, when I applied for the Master Business License for Greene Treats. It took six weeks for me to be officially licensed as a wholesale producer of non-cream filled bakery items. This business is my infant. It cannot be rushed, nor can I swell my expectations. I must have patience, diligence, and good faith.

This is the sample item that I brought to my licensing appointment. A delicious, buttery, spiced apple crumble bar. It is best described as a casual slice of perfect apple pie. The apples in this batch were handcrafted by yours truly from tree to oven - picked, peeled, spiced and baked.

fall raspberry cornmeal cake

     Recently violent windstorms, rain spits, and sun deprivation have all taken a toll on the Pacific Northwest. Currently we rest and reprieve in a warm and sunny calm... not only are we humans aware that these sunny days may be our last for long stretches of cloud cover ahead, but the deer know, the birds certainly know, even the fruit bearing plants know. While walking to my vegetable garden I stepped gingerly over heavy ripe apples and pears that had been blown to the ground. Blackberries barely cling to their vines, so plump and shiny they burst in ones mouth. I stumbled upon a plump and healthy raspberry cane forest and decided to make this delicious raspberry upside down cornmeal cake.

If you aren't a cake person (aka: a pie person) then may this cornmeal cake convert you. It features the sweet and tart filling of a berry pie nestled deeply in a soft, buttery and flavorful cake. The cornmeal heightens the goodness of this cake and pairs well with the somewhat seedy berries.

Baking an upside down cake is quite a thrill. It's like opening presents that have sat wrapped and shrouded in mystery before you. You have to wait patiently for the cake to cool before you can reveal the fruit-painted masterpiece on the underside. In fact, I aspire to infuse that quality in all of my baked treats; the unexpected, the anticipation, the pleasant surprise, and that moment of complete awareness of your being.

I only bake with organic cultured butter made from dairy cows born and raised and milked on the Olympic Peninsula.

late summer

Late summer's bounty is bombarding the Greene Treats kitchen. Mid summer's plums, peaches, nectarines, and berries are plentiful... but the apple and pear trees around town are drooping with sun drenched fruits too! Everything is so sweet, juicy, and luscious. In just a few golden-amber weeks of strong sunshine we will wave farewell to berries and plums and welcome pumpkins and sweet squashes into the kitchen.
